Tomatoes and olives are meant for each other. Why? Because they are perfect when they have been left to become plump and ripe in the glorious Mediterranean sunshine. They are even better when they meet and mingle in this robust, chunky stir through sauce. To enjoy pasta as the Italian do, for 4 serves cook 400-450g of pasta in salted boiling water. Drain and add the jar of sauce to the empty pan. Return to heat, add the pasta and stir about a minute. Serve with freshly grated Parmesan.
Add chunks of tuna or cooked firm white fish to the sauce with lots of fresh parsley and a little lemon zest.
Perfect with chicken too!
